NORFOLK - Caleb Nihira is music teacher in Bancroft, but on Saturdays, he can be found at the Bakery he runs with his wife on Benjamin Avenue in Norfolk.

"How it happened, I don't know," Nihira said. "My wife and I ended up here about a year-and-a-half ago. I didn't have any leads for employment at the time... The opportunity came up for this place and that happened I can't believe a year ago already."

The North Fork Bread Company is celebrating its one-year anniversary this weekend. Nihira and his wife moved to Nebraska from Arizona last year. Between baking, teaching music and looking after their five-month-old, it takes quite the balancing act to keep it going.

"I try to compartmentalize well," Nihira said. "When I'm at work during the day, when I'm at school, I try not to think too much about my responsibilities here. This has now kind of turned into an evening, late night, very early morning work for me now."

The Bakery is only open on Saturday’s because of the couple’s other obligations, but their bread can also be found at Lou’s Thrifty Way and Black Cow Fat Pig.

Nihira doesn’t just bake bread, however.

"We do some other sweet items as well," Nihira said. "Today, I have croissants. Some of the items have sold out as well like my ham and cheese croissants. [We have] morning buns, which are a cross between a croissant a cinnamon roll."

Nihira says what has turned into a small business started as just a hobby.

"It was just baking for my friends, just baking some bread at home," Nihira said. "If we had dinner parties with my friends, I would take some to them and everyone kept saying it was really good so I figured it was something to explore a little more."

North Fork Bread Company is open from 9 a.m. to 2 p.m. every Saturday. It is located at 600 W. Benjamin Avenue in Norfolk.
